Queso Fundido con Rajas y Chorizo

After a brief hiatus, I’m back.  Sometimes its hard to find inspiration, even when you’re doing something you love…

Queso fundido literally translates to melted cheese.  I made this version with queso oaxaca, studded with bits of my homemade chorizo toluqueño and rajas of fire roasted chile poblano & onion.  The mixture is scooped into warm tortillas and eaten before the cheese can coagulate.

The oaxaca cheese melts nicely and has a very mild, creamy flavor which sort of remindes me of provolone.  The nutmeg, cinnamon, and other spices in the chorizo compliment the cheese nicely.

While the flavors may be different, conceptually this dish should be familiar to most norteamericanos.  Americans have dumbed this dish down into “chili con queso” a popular party dip made with molten processed cheese-food, ground beef, canned tomatoes, and various other ingredients.  But here we are after the real thing.  Muy auténtico.
