I stopped in the local fruit market today looking for tomatillos (which they did not have) but instead i found some fresh Nopales. I’m all for eating local but its still pretty cool to find fresh nopales in Illinois, in January!

Nopales are the pads of the prickly pear cactus, an ingredient that (as far as I know) is unique to Mexican cuisine.  I’ve only eaten them once, they taste like you might expect a green vegetable to taste and they are a little slimy. One time I asked my friend Edith to teach me about Mexican food and she made me Ensalada de Nopalitos and tacos of shredded chicken with a guajillo chile sauce.
